Salmon Patties

Introduction

Number of Servings: 8

Ingredients

    1 can Honey Boy Salmon. 14.75 oz.(save juice)
    1/2 cup white onion, finely minced
    1/2 cup cracker crumbs
    1 whole egg
    1/2 tsp. salt
    1/2 tsp. black pepper
    1/2 tsp. garlic powder
    2 tbsp. dried parsley
    UP TO 1/4 cup fish juice if needed.
    Panko bread crumbs(plain) for coating
    Oil for frying

Tips

If you just want a cold salmon salad; omit egg, fish juice and cracker crumbs. Add in 1/4 cup mayonnaise, 1/4 cup sliced celery and one chopped hard boiled egg. and blend rest of ingredients together.


Directions

Strain juice from salmon. Set aside. Remove skin, bones, and brown flesh from salmon. Flake salmon.
Add finely minced onion, cracker crumbs, egg, salt, black pepper, garlic powder and dried parsley. Mix until mixtures comes together. Add fish juice if more moisture is needed.
Form mixture into eight patties. Coat patties in Panko bread crumbs. Fry 4 to 5 minutes until golden brown on one side then turn. Fry until other side is golden brown. Drain. Can be served hot or cold.

Serving Size: Makes 8 patties
