Amazing Stuffed Cabbage!

Ingredients

    2lbs 91% lean ground beef
    2 large heads of cabbage
    1 cup finely chopped onion
    1/2 cup finely chopped mushrooms
    2 cans tomato soup
    3 cloves garlic crushed
    oregano, basil, rosemary, thyme, black pepper to taste.

Directions

Core cabbages and soak in very hot water.

Chop onions and mushrooms and mix with thawed ground beef and spices

make small meatballs (about 20) and fold large outer cabbage leaves around them secure with a toothpick or place folded side down in extra large pot or crock pot. Pour tomato soup and more spices in (for thicker broth add less water to tomato soup) add remaining cabbage. Boil for about an hour.

I make a big batch of this so there are plenty of leftovers since I don't make it often - a serving is about 2 meatballs with plenty of cabbage. Great over brown rice.

For quicker casserole - brown ground beef with onions, mushrooms and spices, chop cabbage and add soup. Simmer until cabbage is soft.
