Number of Servings: 2

Ingredients

    2 large red peppers
    1 1/3c cooked brown rice
    1c eden organic refried kidney beans
    1c diced canned tomatoes
    pepper to taste
    hot sauce to taste

Directions

preheat oven to 400 degrees. wash peppers. cut tops off and remove seeds. set aside. mix all other ingredients in a bowl and spoon into peppers. place peppers on a shallow baking pan and place pepper tops on. bake 30 minutes, or until tender. serve hot. can top with cheese if you like. refrigerates well in plastic containers for up to a few days.
