Introduction

I used this salad as a side dish to fish or poultry. I used this salad as a side dish to fish or poultry.

Ingredients

    Avocado 1 large sliced
    Tomato 2 medium sliced
    14 slices Cucumber peeled
    1 garlic clove chopped or pressed
    1 Tbsp Olive Oil
    1 Tbsp Rice Wine Vinegar
    2 Tbsp fresh Parsley chopped

Directions

Serves 2

In small bowl whisk garlic, Olive Oil, Rice Wine Vinegar and parsley. Set aside.

In large bowl add avocado slices, tomato slices, and cucumber cover with dressing.
