1 C Steel Cut Oatmeal
1 can of Pumpkin Puree
3 C of Water
1/4 C of Walnut or Pecan Pieces
1 teas Nutmeg (fresh ground is best)
1 teas Cinnamon
Add a little honey, agave nectar, or sweetener, if desired.
Add ground cloves (1/8 teaspoon) for a more spicy flavor and pumpkin pie.
Replace one cup of the water for one cup of skim milk or almond milk for a creamier taste and texture.
Add the remaining ingredients, and cook for 10-15 more minutes, or until the desired consistency is achieved. You will need to stir frequently in the final 10 minutes of simmering to avoid scorching.
Remove from heat and serve hot; or allow to cool and place into individual serving containers and you will have oatmeal available for breakfast for the work week.
