Homemade Gluten Free Macaroni and Cheese

Ingredients

    2 boxes Quinoa pasta
    2 packages of Cracker Barrel Extra Sharp Cheddar Cheese
    2 cups skim milk
    4 T. butter
    4 T. rolled oats (gluten free), milled into flour
    1 tsp ground turmeric
    1 tsp. salt
    .5 tsp. black pepper

Directions

Preheat oven to 350 degrees Fahrenheit. Prepare pasta according to package directions. Cut both packages of cheese into cubes, divided into two different bowls. In an oven safe casserole dish, layer pasta, one package of cheese and salt and pepper. In large saucepan, melt butter. Add oat flour and turmeric to make a roux. Add milk and other package of cheese. Stir until thickened. Add salt and pepper to taste. When combined well and thick, pour over layered pasta in the casserole dish. Stir well and bake for 30 minutes at 350 degrees Fahrenheit. Serve.
