Introduction

This makes a lot of cookies! They are soft and crumbly, with a mild sweetness and slight banana flavor. I lightened up the Joy of Cooking version for a healthier, lower fat treat by subbing most of the butter and sugar for 3 bananas. This is the tripled amount of 1 recipe. This makes a lot of cookies! Ingredients

    1 stick of butter (about 1 cup), softened
    3 cups brown sugar
    6 eggs
    2 tbsp vanilla extract
    3 ripe bananas, mashed
    5 1/4 cups plain flour
    2 1/4 tsp baking soda
    2 1/4 tsp baking powder
    1 1/2 tsp salt
    2 tsp cinnamon
    2 tsp nutmeg
    10 1/2 cups oats
    1 cup raisins (can add more or less, depending on preference)



Tips

The original recipe would have called for 1 1/2 cups (about 3 sticks) of butter, and 5 1/4 cups of sugar, but you can cut down on both by using banana, as I did here.
You can also sub the brown sugar for splenda, stevia, truvia, etc. The calorie count for these cookies is with brown sugar.
I like to make this amount and then freeze the batter, shaped into balls, for later. Then I pop one or two in the oven for when I have a craving. And I still have plenty in case people come over or my family wants some as well, then I'll defrost + bake plenty at once.

You can also up the nutrition by adding ground flaxseed or sesame, or other nuts and dried fruits.


Directions

Beat the butter and sugar together untill soft and creamy. Add the eggs, mashed banana, and vanilla, blending well. Add in the dry ingredients and mix well. Stir in oats and raisins. Place on cookie sheets and bake for 10 minutes or untill golden at 350 F. You may have to pat them down and shape them if they are too stiff.
