CHICKEN LOAF

Ingredients

    2 eggs, beaten
    2 cups corn flakes, OR BREAD CRUMBS
    2 tbsp fat free ranch OR ITALIAN dressing
    1 tsp chili powder OR ITALIAN SEASONING
    ½ tsp cumin
    20 oz ground chicken

Directions

Preheat the oven to 350*F.
In a large bowl, mix together the eggs, crushed corn flakes, salsa, salad dressing, chili powder, and cumin.
Add chicken and mix gently but thoroughly.
Shape into loaf on slotted baking pan or broiler pan.
Bake at 350*F for one hour, until internal temperature registers 175*F.
Slice and serve with more salsa.

IF USING BREAD CRUMBS USE ITALAIN SEASONING AND DRESSING.
