Mexican Chicken Chili

Ingredients

    1 3/4 lb boneless skinless chicken breasts
    1 cup chopped onion
    2 1/2 stalks celery, chopped
    2 garlic cloves, diced
    2 cans low sodium diced tomatoes
    2 cans pinto beans, drained & rinsed
    1 small can enchilada sauce
    2 tsp chili powder
    1 tsp cumin

Tips

Serve with greek yogurt dollop, sprinkle on some cilantro, and corn chips if desired.


Directions

Place all ingredients in crock pot. Stir.

Cook for 7-8 hours.

Stir to break up chicken.
