Introduction

soooo yummy for breakfast with a cup of tea! soooo yummy for breakfast with a cup of tea!
Number of Servings: 10

Ingredients

    2 cups whole wheat flour
    1 tsp baking powder
    pinch of salt
    1/2 cup margerine
    1 cup packed brown sugar
    1 eggs, beaten
    1 tsp orange rind
    1/2 cup orange juice
    1/2 cup slivered almonds
    1/2 cup dried apricots, chopped
    1 large apple, chopped roughly
    cooking spray

Directions

combine the flour, salt, and powder into a large mixing bowl. in a smaller bowl, cream the margerine and sugar, then add the eggs, rind, and juice. beat with a hand mixer until smooth. combine the wet and dry ingredients with the mixer until smooth and thick. gently fold in the apples, apricots, and almonds. spoon into a sprayed bread loaf pan and level the top. bake in a 350 degree oven for 35-40 min. serves 10-12.

  • Ooooh this sounds yummy, I think I'll use an egg substitute when I make it though for a little less calories and fat. I think Splenda makes a brown sugar too. - 3/15/08
