Introduction

Packed with protein and bursting with flavor, these pancakes are worth getting out of bed for. Packed with protein and bursting with flavor, these pancakes are worth getting out of bed for.

Ingredients

    2 cups instant pancake baking mix
    1 cup diced apple
    1/2 cup chopped dried cherries
    1 1/2 cup Daisy Brand Cottage Cheese, divided
    1 teaspoon dried cinnamon
    1/2 cup chopped toasted pecans

Directions

Spray a large non-stick skillet and heat to medium heat. In a large mixing bowl prepare the pancake mix according to the package directions. To the prepared pancake batter, add the apples, cherries, 1/2 cup cottage cheese, and cinnamon; mix well. Place about 2 tablespoons of pancake mixture on the skillet. Cook the pancakes on first side until the mixture bubbles (about 2 to 3 minutes). Turn the pancake over and continue cooking an additional 1 to 2 minutes, or until lightly browned. Remove from the heat and set aside; keep warm. Repeat with remaining pancake batter. Place about 3 pancakes on plate. Top with about 2 large tablespoons of cottage cheese and sprinkle with about 1 tablespoon pecans. Drizzle with maple syrup, if desired. Repeat with remaining pancakes.

Serving Size: Makes 7 - 3 pancake servings

    Instead of buying pre-packaged pancake mix made with who knows what and has been sitting on the shelf for goodness knows how long, make your own pancake base. It is simple and you can keep it fresh by storing it in your freezer. I grind my own wheat, but you don't have to. - 10/28/13
