Blackberry Salad

Introduction

Take berries beyond breakfast with this super salad. Take berries beyond breakfast with this super salad.
Number of Servings: 4

Ingredients

    4 cups baby salad greens
    2 cups fresh blackberries
    4 tablespoons balsamic glaze
    2 cups cottage cheese
    4 tablespoons slivered almonds
    4 tablespoons dried sweetened cranberries

Tips

Can't find balsamic glaze? Use balsamic vinaigrette.


Directions

Place a layer of greens on 4 salad plates. Top each evenly with the blackberries; drizzle with the glaze. Top with a scoop of cottage cheese. Sprinkle with the almonds and dried cranberries.

Serving Size: Makes 4 servings

    You can easily make your own balsamic glaze by heating and simmering the vinegar until it reduces to a syrup-like consistency. When I make this salad I serve the cottage cheese on the side--more portion control for me! - 11/8/13

    Maybe it's just me, but this doesn't look like something I would make. It's not low-calorie, and it's high on carbs (28g) I think. For 260 calories I want something more filling than I think this would be. 368 on sodium. Ouch. - 11/8/13

    those blackberries are not quite ripened, are they?
    i had a chance to have some grown at the back of the garden, at their best. incomparable to those from the shop. and NO RED bits in them as these are a sign that the fruit has not reached its maturity yet. it will be sour and flavorless. not nice - 10/26/13
