Amy's Veggie Pizza

Ingredients

    FYI -- this is even more healthy if you use the pizza dough recipe (Easy Cheese Pizza).

    1 refrigerated pizza dough crust
    1 c red onion, diced
    1 c red pepper, diced
    1 c tomato, diced
    1 c fresh spinach "diced"
    6 oz Asiago cheese

Directions

Makes one 12 inch pizza. I cut into 8 pieces (which is the one serving)

Roll out dough into a 12" circle. Preheat oven to 425 degrees.

Dice your veggies -- onion, spinach, red pepper, tomato.

Sprinkle veggies and cheese atop pizza, and bake for 11 minutes. Check to see if cheese is bubbling and looks done. If not, cook another minute and repeat.
