Strawberry Rhubarb Cream Pie

Ingredients

    4 cups diced Rhubarb
    3 1/2 cups sliced Strawberries
    1 cup whole wheat flour
    2 1/2 cups sugar
    8 eggs
    1/2 cup unsweetened almond breeze (or lowfat/fat free milk)
    2 whole wheat 9 inch pie shells

Directions

Mix together flour and sugar. Add it to the strawberry rhubarb. Divide between the 2 pie crusts. Mix together eggs and milk. Pour over the pies. Bake in a preheated oven 425 for 15 minutes. Reduce heat to 350 and bake for 25 to 30 minutes, until knife inserted near the center comes out clean. Let cool and refrigerate. Makes 2 pies with 8 servings each.
