1 Tbsp. Tub Margarine
1 cup onions, chopped
6 cups chicken broth
2 sprigs fresh thyme or 1 tsp dry
1 tsp curry powder
6 cups diced yukon gold potatoes
1 can cream style corn
1 can yellow corn
12 oz. cooked chicken breast, cubed
1/4 cup half and half
Add chicken broth, potatoes, thyme, and curry powder. Cook about 20 mins or until potatoes are tender. Use immersion blender or potato masher until soup is creamy consistency, leaving some potatoes whole. Add corn and chicken breast, cook 5 mins longer. Take off the heat and stir in half and half. Makes approx 16 1-cup servings.
