Double Mushroom Soup

Introduction

10 ounces of shitake, 10 ounces of button mushrooms, 3 T of olive oil and no-chikn broth. 10 ounces of shitake, 10 ounces of button mushrooms, 3 T of olive oil and no-chikn broth.
Number of Servings: 4

Ingredients

    10 ounces of shitake, 10 ounces of button mushrooms, 1/2 an onion and 3 T of olive oil and no-chikn broth.

Directions

saute onion in 3 T of olive oil until translucent. Add in mushrooms and cook until mushrooms release their juices and let them cook down. Add 4 cups of non-chicken broth and simmer for 1 hour. Blend with an immersion blender and add 1 teaspoon of parsley and salt/pepper to taste.
