Whole Wheat Pancakes

Introduction

Sometimes I just crave pancakes. Here's a way to get a little more nutrition out an an indulgent breakfast. Sometimes I just crave pancakes. Here's a way to get a little more nutrition out an an indulgent breakfast.
Number of Servings: 4

Ingredients

    1/2 cup unbleached all-purpose flour
    1/2 cup whole wheat flour
    2 tsp granulated sugar
    1/2 tsp salt
    1/2 tsp baking powder
    1/4 tsp baking soda
    3/4 cup buttermilk
    1/4 cup milk
    1 large egg, separated
    2 Tbsp unsalted butter, melted

Directions

Mix the dry ingredients in a medium bowl.
Pour buttermilk and milk into a 2 cup Pyrex measuring cup.
Whisk eggwhite in with milk.
Whisk egg yolk in with melted butter.
Combine milk and butter mixtures.
Add to dry ingredients and whisk until just mixed.

Pour batter, about 1/4 cup per pancake, onto a griddle over medium-high heat.

Makes about eigth 3-4 inch pancakes.
