1 C. chopped onion
1 C, chopped red bell pepper
1 C. chopped summer squash
1 jalapeno pepper, chopped
1 C. chopped sweet potato
3 Cups low sodium Chicken Broth
1/4 C pearl barley
1 T. Vegetable seasoning, or other spices to taste.
Directions
In a nonstick pan saute vegetables. Add Chicken Broth, Pearl Barley, and Vegetable seasoning.
