Ingredients



    1/2 cup unsweetened Cocoa powder
    3/4 cup Granulated Sugar, divided
    1/8 tsp salt
    1/4 tsp Cream Of Tartar
    3 large Egg whites
    1 tsp. vanilla Extract

Tips

I think I baked mine just under 25 minutes and they were just soft in the middle. So I would suggest checking them after 20 minutes or so. My oven is a bit fast, so adjust to your oven.


Directions

Preheat oven to 300 degrees. Line two large cookie sheets with foil.
Sift cocoa powder, salt and half of the sugar (6 tablespoons) together. In a large bowl, beat egg whites and cream of tartar until soft peaks form. Beat in remaining sugar, adding 1 tablespoon at a time. Beat until meringue is glossy and stiff peaks form. Fold in cocoa mixture.

Drop by spoonfuls on cookie sheet. Bake for 25 minutes for a soft cookie and 40 for a crisp cookie.
