Introduction

I was looking for a quick snack one day and threw this togethere. It'd do well as a side, snack or increase the proportions for a full meal. I was looking for a quick snack one day and threw this togethere. It'd do well as a side, snack or increase the proportions for a full meal.
Number of Servings: 1

Ingredients

    1/3 cup lentils (I use the quick cooking red ones)
    2/3 cup water
    2/3 cup sliced mushrooms
    .25 tsp curry powder
    .25 tsp garam masala
    .25 tsp turmeric powder
    1 tsp minced garlic
    Olive Oil Spray

Directions

Cook the lentils in the water with the curry, garam masala and turmeric. Start on high heat until the water bowls and then turn down to low. Let simmer until the water is absorbed by the lentils. If you wish softer lentils, add more water.

Spray a small amount of olive oil spray in a pan. Sautee mushrooms and garlic together until mushrooms are tender.

Once the lentils are cooked, mix the mushrooms & garlic with the lentils and serve.

Makes 1 serving,

Other ideas (not in the nutritional calculations):
Add some shredded swiss cheese or other cheese.
Sautee onions with the mushrooms.
