Number of Servings: 10

Ingredients

    1 package jumbo pasta shells
    15 ounces part skim ricotta cheese
    8 - 12 ounces mozzarella cheese grated
    1/2 cup parmesan cheese grated
    1 10 ounce package frozen spinach thawed, with water squeezed out
    1 jar Newman's own pasta sauce (or make your own)
    1 tsp nutmeg
    1 tsp black pepper
    1 tbsp parsley
    2 large eggs

Directions

Cook shells according to package instructions
Lightly beat eggs, add to cheeses, spinach, and seasonings, mix well.
Put about 1/2 cup of sauce in bottom of large pan, corning wear, or metal, it doesn't matter, just large enough for the shells.

Stuff about 2 tbsp of cheese mixture into the cooked shells, place into large pan cover with remainder of sauce.

Place into 350 degree oven for about 30 minutes or so, until sauce is bubbly all over. If desired the when there is about 5 or 10 minutes left you can sprinkle with cheese and let that melt in the oven.

Makes about 10 servings. 2 shells per serving (it really depends on how full you stuff them.)
