Introduction

This is the best bread recipe packed with nutrition. The millet really puts a nice little crunch and the texture is the best I've had for whole wheat bread- nice and light. Ingredients

    6 3/4 c. warm water
    3 T. instant yeast
    1/2 c. oil
    2 T. salt
    1 c. molasses
    2 c. old fashioned rolled oats
    1/2 c. millet
    3/4 c. wheat gluten
    16 c. wheat flour

Tips

If you are kneading this dough by hand on the counter, add flour as you knead, just spray the counter and your hands with spray oil so they don't stick so much. Knead this until it has a nice stretchy feel to the dough, then transfer to a bowl and let rise until double in size. Punch down and place in pans and let rise again, then bake.

Directions

Add dry ingredients to liquid ingredients and knead until gluten forms. Test by taking a small piece of dough and pulling it apart. If it breaks easily, its not ready. It is ready when it stretches. (If you use a Bosch mixer, mix for 5 minutes and it's ready to put into loaf pans.) You may need more or less flour as called for in the recipe. Just add enough to get the correct consistency for bread. Put dough in sprayed pans and let rise until double in size. Bake at 350 degrees for 35 minutes on the bottom rack of oven.
