Pumpkin bowl cake (low Carb)

Introduction

This cake packs 12 grams of protein and only 13 carbs. I think its perfect for breakfast or to quench any sweet tooth.
If you want to change up the flavor,just change the fruit you add. I use mashed banana for banana bread, blueberries for a great blueberry muffin (just add 2 tbsp of unsweetened applesauce), I have even done diced apples in place of the pumpkin. They are all so good. Enjoy!

Ingredients



    *Libby's 100% Pure Pumpkin Puree, 0.25 cup
    Eggland's Best Large Egg, 1 serving
    *almond meal (trader joes ) 3 tbsp
    *Pumpkin Pie spice, 1 tsp
    Vanilla Extract, 1 tsp
    sweetener (stevia or splenda) 2 tsp
    Cinnamon, ground, 0.5 tsp
    Baking Powder, 1 tsp

Directions

With a fork mix all ingredients together in a cereal size, microwave safe bowl.
Cook in microwave for 2 minutes and then Enjoy!!

Serving Size: one huge cake per serving
