Mexican Qunioa

Introduction

A Mexican inspired quinoa recipe to enjoy with your favorite dishes! A Mexican inspired quinoa recipe to enjoy with your favorite dishes!

Ingredients

    1 cup Quinoa, I prefer rainbow
    1 can rotel tomatoes with chiles
    1/2 cup chicken stock
    1 sweet red pepper
    1 sweet orange pepper
    1 sweet yellow pepper
    1/2 a red bell pepper
    1/2 an orange bell pepper
    1/2 a yellow bell pepper
    1 clove of garlic minced finely
    1/2 an onion finely chopped
    1-2 tbs olive oil
    Salt and pepper to taste

Directions

Rinse quinoa until the water runs clear and set aside.
Heat olive oil in a pan and add half of an onion chopped and one clove of garlic minced for a minutes. Saute chopped bell peppers and sweet peppers (I use half of a red bell pepper, half of a yellow, half of an orange, one sweet red pepper, one sweet yellow pepper, and one sweet orange pepper) for about 2 minutes. Add rinsed quinoa and saute for about five minutes.
While sautéing I liked to blend my rotel tomatoes with the chicken stock since I hate tomato chunks but this is not a necessary step.
Add seasonings, rotel tomatoes, and chicken stock. Bring to a boil and then reduce to a simmer for 20-25 minutes.
