6 lbd whole chicken
2 T. chopped rosemary
2 T sea salt
3 garlic cloves, chopped
1 T freshly ground black pepper
1/4 cup balsamic vinegar
1/4 cup red wine
clean chicken, pat dry.
in samll dish, combine rosemary, sea salt, garlic and pepper. rub mixture all over chicken inside and out. Let sit for atleast 1 hour and upto 24 hours if desired. Cover and place in refrigerator.Sprinkle red Onins on bottom of roasting pan.Place whole chicken on top. Pour vinegar and wine over chicken.
Roast Chicken for approximately 2 hours (20 minutes per pound)
Serve with onion mixture.
