Mediterranean Frittata

Ingredients

    1 chopped onion
    100g chopped peppers
    50g spinach or rocket
    2 eggs
    1/3 cup 2% milk
    200g potatoes (around 1 cup chopped)
    50g broadbeans (fava)
    30g feta cheese
    10 pitted black olives
    1 tsp dry oregano
    1 tbsp fresh parsley
    salt and pepper to suit
    1 tblsp water

Directions

Spray a little frylight into a pan and sautee onions and peppers until soft. Add chopped potatoes and broadbeans and heat through. Add rocket/spinach, herbs and olives. In a bowl whisk eggs, milk and water. Add salt and pepper if you like. Remove vegetables from heat and spoon into a small pie dish. Pour egg mixture onto veggies and then crumble feta on top. Bake in medium heated oven for 30 minutes or until all water is evaporated and light brown on top. Can be eaten straight away, or cold for lunch at work. You could also substitute the potato for chopped sausages, but this is likely to be more calories.
