2lbs lean ground beef
2 cups any salsa
1tbsp ground cumin
2tbsp chopped cilantro
4tbsp chopped chives
2 cups brown rice
16oz light sour cream
1tsp Cayenne pepper (optional)
1 cup shredded mexican blend cheese
Top with 1 cup shredded mexican blend cheese.
If you have some people hwo like spicey and some who don't, you can choose to just add the cayenne and serve with extra sour cream, or you can omit the cayenne from the recipe and put it on the table for those who like it hot!
Reheats well, and will leave you a lot of leftovers.
Once beef is cooked, stir in salsa, cumin, cilantro and chives and remove from heat.
When the rice is tender, remove from heat and stir in sour cream , cilantro, shredded cheese and cayenne (optional) till well incorporated.
Spread rice out in the bottom of a 9x13 casserole dish, then top with layer of evenly spread out beef mixture.
Sprinkle remaining cheese on top.
Put in oven at 250 degrees until cheese is melted on top.
