Creole Chicken

Ingredients

    1/4 c. flour
    3 tbls. canola oil
    Green Peppers (bell peppers), 1 cup, chopped
    Celery, raw, 1 cup, diced
    Onions, raw, 2 cup, chopped
    1 bay leaf
    2 tbls. creole seasoning
    garlic to taste
    Tomatoes, Whole, No Salt Added, Food Lion, 7 serving (remove)
    Chicken Breast, no skin, 16 ounces

Directions

Make a rue of the flour and oil and brown in the bottom of a large pot until it is the color of peanut butter.

Add the chopped veggies with the garlic and saute until soft.

In the mean time, brown the cubed chicken.

Add 2 cups. of chicken broth and 2 cans of tomatoes, chopped to the large pot of veggies and rue.

Let simmer for 15 minutes and add chicken. Let simmer until chicken is cooked completely.

Serve over rice
