Turkey Sausage and Mushroom Casserole

Introduction

This is my favourite healthy eating dish. It's got all the creamy, tasty, decadent qualities of non-diet food, but without the guilty. Sometimes I make it with sliced zucchini ore even carrots, instead of spinach. Whatever takes your fancy! Great with either pasta or rice. This is my favourite healthy eating dish. Ingredients

    4 Turkey Sausages
    1 small onion, chopped
    1/2 cup mushrooms, chopped
    1 can low fat Campbells condensed Mushroom Soup
    50 grams spinach or rocket (or substitute veggie)
    1 glass of red wine
    50 grams finely chopped sweet peppers (any)
    chilli flakes (to suit your taste)

Directions

Spray frylight into a pan and sautee onions and whole sausages until onions are soft and golden. Slice almost-cooked through sausages into smaller pieces and return to pan. Add peppers and mushrooms, heat through. Add , wine, chilli flakes and simmer on low until sausages completely cooked through. Finally, stir in condensed soup, and heat on low until just about to boil. You will get the most creamy consistency with this condensed soup if you don't boil it. Once dish is hot and ready to eat, serve with rice or pasta. (Also nice with chicken legs instead of sausages. Also nice if done in slow cooker. Also nice with condensed chicken soup... LOL).
