Golden Potato Leek Soup

Introduction

Great chilly fall comfort food! Great chilly fall comfort food!
Number of Servings: 4

Ingredients

    Cooking Spray
    3 C thinly sliced Leeks (about 3 med.)
    6 C cubed yukon gold potato (about 2 1/4 lb)
    2 C water
    1/2 tsp Salt (I use sea salt)
    1/2 tsp fresh ground pepper
    1 tsp ground garlic (or 2 cloves minced)
    28 oz no salt added vegetable broth
    2 sprigs Fresh Thyme
    for a little kick add two dried ancho chilis

Directions

Spray crock pot or dutch oven with cooking spray; add leeks and let cook for 10 mins or until tender. Add cubed potatoes and rest of ingredients. In crock pot cook on high for 4 hrs; in dutch oven bring to a boil, reduce heat and simmer, uncovered, for 20mins or until potatoes are very tender.
Partially mash potatoes with a potato masher, and dircard thyme sprigs; add 3/4 c whipping cream if desired (not in nutritional information)...I leave it out and it is still satisfying.

Serving Size: 4 main dishes or 6 side dishes
