Noodle-less Spinach Lasagna

Introduction

Ingredients

    5 Zucchini, cut lengthwise into 1/8" slices
    2 cups marinara sauce
    1 package frozen spinach prepared per package directions and drained
    1 pound non-fat cottage cheese
    1/2 Tb garlic powder
    1 1/2 cups shredded parmesan cheese
    Salt and ground black pepper to taste

Tips

For additional flavor, add finely diced onion and chopped mushrooms to the cottage cheese mixture.


Directions

Sprinkle zucchini slices lightly with salt and pepper. Grill until cooked through.

Cover the bottom of a lightly oiled 9"x9"x3" baking dish with a thin layer of marinara sauce.

In a medium bowl, mix the cottage cheese, spinach, the remaining marinara sauce and 1 cup of the parmesan cheese until evenly distributed.

Cover the marinara sauce in the baking dish with a single layer of grilled zucchini slices. Cover with a half inch of the cottage cheese mixture. Continue alternating layers until all the cottage cheese mixture is used, ending with a thin layer of the cottage cheese mixture. Top with the remaining parmesan cheese.

Bake in a 375F degree oven 30-40 minutes until the sides of the lasagna are bubbling.

Let cool for 15-20 minutes before serving.
