Near-Instant Spicy Vegetarian Chili

Introduction

Chili doesn't have to take several hours. I bought all the ingredients for this in one easy trip to Trader Joe's but of course equivalents from other stores would work just as well. Would also be good without the corn and with sliced carrots, if cooked a little longer. Chili doesn't have to take several hours. Ingredients

    3/4 can Trader Joe's Whole Kernal corn no sugar added; 1 can w/juice of Trader Joe's black beans; 2 Tbsp Trader Joe's 3-pepper salsa; 1 bunch fresh cilantro, chopped; 1 tbsp cumin seeds; 3 cloves garlic, chopped; 1 green onion, chopped; 1/2 tbsp chili powder.

Directions

Put beans and corn together in a pan with fresh chopped spices, cumin and chili powder and simmer on medium heat for about 10 minutes or until cilantro and garlic are tender. Makes 5 1/2 cup servings.
