Whole Wheat Banana Bread or Muffins

Ingredients

1 Stick unsalted butter
1/2 cup brown sugar - light or dark, packed
3/4 tsp baking soda
1/2 tsp salt
1/4 tsp ground nutmeg
1/2 tsp cinnamon
1 tsp vanilla extract
2 large eggs
1/4 cup honey
2 cups whole wheat flour
1/2 cup walnuts (or 2/3 cup chocolate chips for use in muffins)
Directions
Preheat oven to 350 and grease a 9x5 bread pan. (Muffin instructions are at the bottom - prepare the same batter without the nuts, unless you prefer them.)
In a mixing bowl blend the butter and brown sugar until creamy. Add in the baking soda, nutmeg, cinnamon, salt, blend well. Mix in the vanilla, honey, mashed banana and the eggs, one at a time. Blend in flour.
Pour mixture into bread pan. Let sit for 10 minutes. Bake at 350 for 50 minutes. Gently place a piece of foil on top of the bread and bake for another 10 to 15 minutes, or until a cake tester comes out clean. Let cool for 10 minutes, then remove from pan to a rack and let cool completely.
**To make this as Banana Chocolate chip muffins instead of bread, prepare the same batter, but omit the walnuts and replace with 2/3 cup of chocolate chips. Divide batter in 12-cup muffin pans. Will almost be filled to the top. Bake at 350 for 23-28 minutes or until done. Let cool for a few minutes then remove to a cooling rack to cool completely.
I have made this as the bread and it turned out great. My fiance loved it and suggested I make muffins with it - the recipe I used actually had the muffin recipe as well so I just made them today! Haven't tasted them yet but the look and smell delicious!
