Ingredients

3 tbsp butter
1 1/4 cups dry mashed potato flakes
1/4 c grated Parmesan cheese
1/2 tsp salt
1/4 tsp pepper
8 chicken thighs with skin and bone
1 egg, beaten
Directions
heat oven 425 degrees. heat butter in 9x13 pan in oven until melted. mix potatoes, cheese, salt, and pepper. dip chicken into egg, roll in potato mixture. place skin side up in pan. bake uncovered 50 minutes or until thickest pieces are done and coating is crisp
