Low-Gluten Sweet Potato Ravioli

Introduction

This recipe does use a little bit of white flour for texture, so it is NOT gluten free. I'm sure you can use another type of flour instead, if you'd like. Number of Servings: 6

Ingredients

    2 Tbsp Chickpea Flour
    2 Tbsp White, Whole wheat, or even rice flour
    1/4 cup Oats, blended into flour
    1/4 cup Tapioca Flour
    1/4 cup Almond Flour

    Oregano, basil, salt and whatever other spices you want

    1 egg
    water for dough

    Filling:
    1/2 sweet potato, cooked and soft
    1 cup ricotta

Directions

Combine all of the flours and spices. Mix well. Add eggs and a sprinkle of water. If dough is too dry, add another sprinkle of water.
Flour a counter or flat surface. Roll dough out very thin. Cut out circles or squares (2 for each ravioli)
Mash sweet potato and combine with ricotta. Add a little bit of salt if desired.
Place a small amount of filling in the center of a circle of dough. Put another piece on top and seal edges. You may need to use a tiny amount of water on the edges to seal.
Freeze or boil (10 minutes) and eat!

Serving Size: Makes 36 raviolis - 6 Ravioli per serving
