Introduction

You will have to eat low fat the rest of the day because this one is very high in fat, but so worth it! You will have to eat low fat the rest of the day because this one is very high in fat, but so worth it!

Ingredients

    6 Pork loin chops, cubed
    2 T Dijon Mustard
    2 T Light Margerine
    1 T Olive oil
    1/2 C chopped pecans
    Salt and Pepper to taste

Directions

Preheat oven to 450 degrees. Cut and discard most of the fat from the pork chops
Place the pecans, salt and pepper in the food processor. Cover and blend on high speed, using quick on-and-off motions, until the pecans are finely chopped. Place pecan mixture in the shallow bowl. Spread the mustard mixture over all sides of pork. Then coat all sides with the pecan mixture, and place on a baking sheet. Bake in the oven for five minutes at 450 degrees. Reduce heat to 350 degrees and continue to bake another ten to fifteen minutes.
