Banana Muffins

Ingredients

    1 cup whole wheat flour
    1 cup ground rolled oats (Old Fashioned) - 116 grams
    1 teaspoon baking soda
    1/4 teaspoon salt
    1/2 cup Unsweetened apple sauce
    1 tsp of Stevia (or 3/4 cup brown sugar, in which case calories are higher)
    2 eggs, beaten
    2 1/3 cups mashed overripe bananas
    27 frozen cramberries (or any other sour frozen fruits: rasberries, blueberries...)

Directions

Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, combine flours, baking soda and salt. In a separate bowl, mix together apple sauce and stevia (or brown sugar). Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into lightly greased muffins pans.
Bake in preheated oven for 16 to 17 minutes, until a toothpick inserted into center of the muffin comes out clean. Let muffins cool in pan for 10 minutes, then turn out onto a wire rack.
