Mexican Taco Bake

Number of Servings: 6

Ingredients

    1 lb Ground Turkey
    1 medium bell pepper (any color)
    1/2 medium onion
    1 can diced tomatoes with chiles, onion and cilantro
    1 cup salsa
    2 cups white rice, cooked
    1 can fat-free refried beans
    2 cups mexican blend reduced fat cheese
    1 cup crushed tortilla chips


Tips

You can mix half the cheese in the meat mixture, and half on top depending on preferences. Serve with optional sour cream and guacamole, lettuce, or tomatoes


Directions

Brown ground turkey with onion and peppers. Drain fat.
Add tomatoes, salsa, and rice.
In a casserole dish, spread refried beans on bottom. Add rice/meat mixture. Top with cheese and crushed chips. Bake at 375 for 15 minutes until warm and cheese has melted.
