Crockpot Country Captain Chicken

Number of Servings: 4

Ingredients

    4 boneless chicken breasts
    salt and pepper to taste
    1 tbs curry powder
    1 cup coarsely chopped onion
    1/2 cup coarsely chopped red bell pepper
    1/2 cup coarsely chopped green bell pepper
    1 can diced canned tomatoes
    1/2 cup raisins
    2 tbs cornstarch

Tips

Serve over hot steamed rice and garnish with chopped almonds if desired. If you prefer a stronger curry flavor add additional curry powder.


Directions

Lightly spray crock with non stick spray
Place chicken breasts in bottom of crock
Add remaining ingredients (except cornstarch) as listed
Cook on high for 2 hours
Mix cornstarch in 1/3 cup water and stir into mixture
Continue cooking for 15 minutes

Serving Size: Four Servings
