Lentil Vegetable Soup

Ingredients

    1 c lentils washed
    1 chicken bouillion cube dissolved in 3 cups water
    1 c shredded cabbage
    1 1/2 c chopped carrots
    1 20 oz tin diced tomatoes
    1 28 0z tin crushed tomatoes
    1 c chopped onion
    1 c chopped celery
    2 tsp salt
    1/2 tsp pepper
    1/2tsp dried thyme
    1 clove garlic crushed
    2 T canola oil
    1 T dried parsley
    1 T red wine vinegar
    1 bay leaf

Tips

You can vary the amount of seasoning according to your taste. This soup freezes well.


Directions

Saute carrots, onions, celery garlic and cabbage in oil until soft. Add seasonings, bouillon cube in water, canned tomatoes and lentils and simmer one hour or so until lentils and vegetables are cooked.
