Lentil Salad

Introduction

This salad can be prepared in advance to get you through a few days' worth of take-to-work lunches. This salad can be prepared in advance to get you through a few days' worth of take-to-work lunches.
Number of Servings: 4

Ingredients

    1 1/3 cups brown lentils
    1 slice lemon
    1 clove garlic, peeled (left whole)
    1 medium head broccoli, cut into florets
    1 large bell pepper, roughly chopped
    1/3 cup dried apricots, quartered
    juice of 1 lemon
    2 tbs olive oil
    1/2 tsp ground cumin
    1/4 cup sliced almonds or sunflower seeds

Tips

Add a little goat's cheese or feta for some extra flavour and protein.


Directions

Place the lentils in a pot of water with the garlic clove & lemon slice. Simmer for 25-30min or until tender. Drain.
Place the broccoli in a bowl and cover with boiling water. Stand for 2min, then drain & refresh under cold water.
In a jug or jar combine lemon juice, olive oil and cumin (add other seasonings if desired)
In a large bowl, combine lentils, broccoli, pepper, apricots. Add dressing and toss to combine.
Divide salad between serving bowls (or airtight containers if this is for lunches!) and sprinkle the almonds over the top.
