Cream Cheese Cake (1/24 of cake)



Introduction

Ingredients

    Betty Crocker Super Moist French Vanilla Cake Mix (dry)
    8 oz. package Neufchatel Cheese
    4 large eggs
    1/2 cup water
    1/2 cup oil (I used coconut oil)
    1/2 cup sugar
    1 Tbls. vanilla extract
    1 Tbls. Almond extract

Tips

I use the Nufchatel cheese straight from the refrigerator with my stand mixer. It may need to be brought to room temperature when using a hand mixer.


Directions

Preheat oven to 350 degrees. Spray 9 in. x 13 in. cake pan with Baker's Joy baking spray with flour.

With electric mixer, combine Neufchatel cheese with oil until light and fluffy. Add eggs and mix well. Add water, vanilla extract and almond extract. Add cake mix and continue to beat til well mixed. Mixture will be rather thick.

Pour into prepared cake pan. Bake at 350 degrees for 35 - 40 minutes, or until cake tests done.

Serving Size: Makes approximately 24 - 2.25 in squares.
