Ingredients

    1 C Chicken broth
    3 cans Tomato Sauce
    1 can Stewed tomatoes
    1 medium yellow onion
    1 bunch celery
    1 can carrots (canned or fresh)
    1 pound Hamburger
    2 cans mushrooms (canned or fresh)
    2 small zucchini
    1/2 can green beans
    2 handfulls spinach (optional; doesn't freeze well)
    any other vegetable that might be lying around
    Oregano (to taste)
    salt (to taste)
    pepper (to taste)
    garlic (to taste)
    2 T olive oil

Tips

This freezes beautifully and is a quick meal to keep on hand when you only have time to reheat something.


Directions

Brown Hamburger
Saute onions, celery, carrots, garlic in olive oil
Combine chicken broth, tomato sauce, stewed tomatoes, and all other ingredients to slow cooker
Flavor with salt pepper and oregano (extra garlic if desired)
Cook until all vegetables are soft and all flavors have come together.

Serving Size: Makes ten bowls of soup (aprox 1.5 cups each)
