Chicken Quinoa Casserole

Ingredients

    1 can Campbell's cream of chicken with herbs
    1 cup water
    1 cup dry, uncooked quinoa
    3 large (1 lb total) boneless, skinless chicken breasts
    paprika for sprinkling

Tips

You can also leave the chicken breasts whole, but you will need to bake longer to get the chicken done. Serve with a side of veggies.


Directions

Prepare chicken by cutting into 1-inch chunks. Place in casserole dish. Empty can of soup and water into dish, add quinoa and mix gently until incorporated and chicken is covered. Sprinkle paprika on top. Bake at 400 for 40-45 minutes, until brown around edges and chicken is done.
