Ingredients

    Olive Oil (2T)
    Onion (1 med)
    Carrot (1 large)
    Zucchini (1 large)
    Garlic (3 cloves)
    Chickpeas (350 g)
    Kidney Beans (400 g)
    Stewed Tomato (680 g)
    Tomato Paste (6 oz)
    Lecho (340 g)
    Water (32 oz)
    Veg Stock (5 t)
    Sugar (2 t)
    Herbes de Provence (˝ T)
    Cooked Pasta (18 oz)

Directions

Saute onion, carrot, zucchini, and garlic in olive oil. Add everything else except the pasta. Bring soup to boil and then simmer, covered, for 10 minutes.

Add cooked pasta just before serving.

Serving Size: Makes 8 bowls
