Red Lentil Soup

Introduction

Ingredients

    2 onions chopped
    2 TBS olive oil
    12 oz. portabello mushrooms, diced
    2 cans of tomato paste (6 oz.)
    2 1/2 cups red lentils
    12 cups of broth, chicken or vegetable flavor (I used Streit's Low Sodium Chicken Flavor Soup Base)



Tips

This recipe is easy and straight-forward. I usually scrape out the gills of the mushrooms, it makes it a little neater.

Directions

Saute onion until translucent. Add mushrooms and saute 5-7 minutes. Add broth, lentils and tomato paste. Bring to a boil. Lower heat to simmer and cook 15-20 minutes until lentils are soft but not mushy.
