Couldn't be simpler! Dump in crockpot and cook. Can top with grated mozzarella cheese at serving but that is not accounted for in nutritional information. Couldn't be simpler! Ingredients

    4 cups canned or prepared from dry white beans
    4 cups vegetable stock
    2 cups chopped onion
    2 cups frozen corn
    2 tbsp fresh or bottled lemon juice
    1 tbsp Italian seasoning
    1 tbsp cumin (or less to taste)
    2-3 cloves garlic, chopped or equivalent garlic powder
    salt and pepper to taste

Directions

Dump all ingredients in slow cooker and cook on high 4-6 hours or low 8-9 hours.
