Rad's Mexican Fiesta Casserole

Introduction

A Hearty Mexican Meal (You can adjust the ingredients to low or no fat as is your preference.) I Served with fresh homemade salsa and guacamole on the side.
(Assumed 1 TB Sour cream per serving)

Number of Servings: 8

Ingredients

    3/4 LB ground beef
    1 TB Vegetable Oil
    1.5 cups of finely chopped Zucchini
    1 to 1.5 cups of chopped onion
    1 cup frozen yellow corn
    1 can black beans, rinsed
    1.25 ounces or 1 envelope taco seasoning
    2.5 cups of Medium Chunky style salsa (or Mild or hot - your preference)
    8 - 6 in corn tortillas
    1/2 cup sour cream
    1/2 cup chopped green onions

Directions

1) Cook ground beef in oil until browned in a very large pan.
2) Drain off the majority of the grease.
3) Add onion and zucchini and cook over medium heat until tender (about 5 min)
4) Add taco seasoning, water, corn and black beans
(simmer about 5 minutes) or until desired consistency
5) Preheat oven to 350
6) Grease (9x13) glass baking dish
7) Layer ingredients in baking dish
- 1/3 of salsa
- 4 corn tortillas
- 1/2 of meat mixture
- 1/2 of cheese
- 1/3 of salsa
- 4 Corn tortillas
- Remaining meat mixture
- Remaining Salsa
- Remaining Cheese
8) Bake @ 350 for 25 minutes (cheese melted)

Serve with Green Onions and Sour Cream on the Side
