Watercress Soup

Introduction

This is a very low calorie diuratic soup. Faintly tastes like a peppery potato soup, though bright green in color. This is a very low calorie diuratic soup. Faintly tastes like a peppery potato soup, though bright green in color.
Number of Servings: 8

Ingredients

    2 bunches Watercress, just the leafy tops
    4 cans low sodium chicken broth
    2 cans sliced potatoes

Directions

Drain potatoes pour into blender, add 1 can broth and blend to chunky/smooth texture. Pour mixture into pot. Pour another can of broth in blender and add watercress, blend til smooth and pour into pot with potato mixture. Cook until hot adding black pepper to taste.

  • I love watercress in any form, especially soup, but I don't see why anyone would ever want to buy canned potatoes! They have an awful texture & taste. Much better to boil up a few fresh ones & mash them into it. I added onions as well, & garnished with sour cream. - 11/9/08

  • Good as is if you're stuck with lots of canned good which I often am or great if you make totally fresh. I add heat to everything, but I love the watercress. - 11/9/08

  • I added a small onion and a garlic clove. I put them in the blender with some of the soup and got them as fine as possible. Other than that addition, I made half of the recipe. It's pretty good. I froze portions to eat a half hour before a meal. - 12/1/07

  • I made this with many changes, I cooked diced potatoes in my own chicken broth until they were mushy, I added the chopped watercress. I also did a quick calculation, and had 25 more calories, but 1/10 the sodium - 12/1/07

  • For a vegetrarian version, I replaced the chicken broth with vegetable broth, I used fresh potatoes and I added a dalop of low fat sour cream. Delicious! :-) - 11/30/07
