Jen's Carrot Cake

Ingredients

1 cup sugar
4 eggs
1/2 cup unsweetened applesauce
1/3 cup canola oil
1 tsp vanilla
3 cups grated carrot
2 cups whole wheat flour
2 tsp baking soda
1 Tbsp cinnamon
Frosting:
1 (8 oz) pkg fat-free cream cheese
1 Tbsp fresh lemon juice
1.5 cups sifted powdered sugar
milk to thin if necessary (add 1 tsp at a time)
Directions
Preheat oven to 325*. Cream together the sugar, eggs, applesauce, oil and vanilla. Add carrot. In a separate bowl, combine the flour, baking soda and cinnamon, then slowly add to carrot mixture. Pour into greased 9x12" baking pan and bake for 50-60 minutes or until a toothpick inserted into the middle comes out clean.
For frosting, cream together the cream cheese, lemon juice and powdered sugar 1/2 cup at a time until you get the consistency you like. Thin with milk if necessary.
Let cake cool, then frost. Yum!
