IntroductionI've taken my Mom's old recipe and made it MUCH more healthful. It tastes just as good, but not nearly as oily :) I've taken my Mom's old recipe and made it MUCH more healthful. It tastes just as good, but not nearly as oily :)
1 cup sugar
1/2 cup unsweetened applesauce
1/3 cup canola oil
1 tsp vanilla
3 cups grated carrot
2 cups whole wheat flour
2 tsp baking soda
1 Tbsp cinnamon
1 (8 oz) pkg fat-free cream cheese
1 Tbsp fresh lemon juice
1.5 cups sifted powdered sugar
milk to thin if necessary (add 1 tsp at a time)
For frosting, cream together the cream cheese, lemon juice and powdered sugar 1/2 cup at a time until you get the consistency you like. Thin with milk if necessary.
Let cake cool, then frost. Yum!
